Down the street are buzzing businesses like JAW Bats, a one-man shop that creates custom-made baseball bats for customers worldwide, and Antiques on the Prairie, which rents space to antique dealers and much more. What once was a line of vacant, hollowed-out buildings now is a collection of burgeoning businesses.Īcross the street from the bank is the Lumberyard Arts Center, a multipurpose space that houses an art gallery as well as a boutique and performance and class spaces. Venerable businesses like Baldwin State Bank, founded in 1892, and 32-year-old Quilters’ Paradise anchor the square, but look around. While it was announced just in March that Baldwin City had joined Atchison and Junction City as Kansas Main Street communities, which entitle those communities to state-funded grants and consulting services, the renaissance of the downtown area has been years in the making. Is the resurgence of “main street” business the result of being one of three towns in the state to be designated for the Kansas Main Street project? Or was Baldwin City awarded the designation because of its downtown rebirth? Which came first?Īll indications point to the latter. Opening the doors in August of 2013, Pine Street Burgers quickly became popular as an affordable, casual place to come and satisfy the craving for a killer burger, fries, and a shake, leaving our customers feeling like they had a meal that was hearty, substantial, and reasonably healthy. In addition, an all natural dairy free shake that could be made into all of the favorite flavors, keeping it without dairy, and at the same time, all-natural and free of additives. We also wanted to come up with a hand- scooped, all natural shake, with unprocessed flavorings. We trotted along for around 8 years and did well, all the while looking for the perfect location for our long dreamt about burger joint.Īfter several unsuccessful attempts at leasing a new spot, it occurred to us we were sitting on the perfect location….right in the space of our current hot dog and sandwich place! We began testing diligently all natural burgers, house made vegetarian burgers, buns without additives or high fructose corn syrup, gluten free buns that held up well to a burger and all the goods that belong on it, and healthy oils free of trans fats. It was, in fact, a fun place to own in many ways, but not really where our passion resided. We bought this last place mostly because we liked going there and thought it would be a cool place to call our own. Over the years we opened 3 South Pine Cafes, purchased another small cafe in downtown Nevada City and bought a sandwich and hot dog joint near Sierra Nevada Memorial Hospital in Grass Valley. We talked about it, made some burgers and fries at home, came close to leasing some spaces to try out our idea, but nothing was clicking and the timing just wasn’t right.
